Healthy Coconut Ice Cream Recipe – Ketogenic
There are great Keto recipes which you can make on a keto diet. One of my favorites is a healthy coconut ice cream recipe. My hubby used to insist on store bought ice cream, but now he only wants homemade ice cream. I have put him on a paleo diet because he doesn’t have diabetes. He loves this keto ice cream, though.
You will find that it doesn’t really need a sweetener, however I like the sweet taste. As natural raw honey is good for you, and I only put in one teaspoon for the 4 bowls, you get about 2.5 gram of carbs per bowl. On the keto diet you’re allowed 20 grams of carbs per day. I take mine in the form of raw honey.
Here’s the recipe:
Healthy coconut ice cream recipe
1 can of coconut milk
6 egg whites
1 teaspoon of vanilla extract
One teaspoon of raw honey

Beat the egg whites until stiff, set aside. Beat the coconut milk, honey and vanilla extract together. Fold in the egg whites. Freeze.
It comes out better if you have an ice cream maker. If you don’t have an ice cream maker, go to the freezer every 15 minutes to half an hour for about 5 hours and shake the ice cream. You will need to put the ice cream in a sealed container if you do that.
You can make it in different flavors by omitting the vanilla extract and adding your favorite flavor: Coco or cacao powder, peppermint extract, coffee or any flavor really. My favorite is vanilla and I always make that. If you want to turn it into a paleo recipe, you can add crushed pineapple. (the kind in natural juice, not the one in a sugary syrup.
This recipe makes 4 bowls of ice cream. You can easily double it if you need to make more.
